Teriyaki pork cutlets

Easy: 7 steps, 37 minutes

This recipe is easy to prepare, cooks in no time and you can prepare everything basically day before if you wish to give the flavors more time to distribute. And because it's cooked with almost no extra fat, it's really lean and healthy for summer dinners, when you don't really feel like eating anything heavy. A massive win!

Step #1: Collect ingredients

For a 2-3 people dinner you will need:

  • 400g of pork cutlets, a.k.a. minute steaks, or the loin sliced in 1cm slices,
  • 2 medium carrots,
  • 1 medium potato,
  • half of a large onion or one medium sized,
  • 1/2 teaspoon of garlic powder, 1/2 teaspoon of pepper, and salt to taste,
  • 2-3 tablespoons of teriyaki sauce,
  • rice (usually 2-3 cups).

Step #2: Collect utensils

You will need following utensils to prepare your teriyaki port cutlets:

  • rice cooker,
  • medium metal or glass bowl,
  • small pot,
  • frying pan (best with heavy bottom),
  • meat tenderizer.

Step #3: Prepare and marinade pork (10 minutes)

Wash and dry each of the minute steaks, using paper towel. Lay them one by one on a heavy board and slam each side with a meat tenderizer 2-3 times to tenderize each side. This will allow the teriyaki sauce to distribute nicely inside the meat and will free the meat juices.

When all steaks are tenderized, place them in the bowl and pour the teriyaki sauce over, sprinkle with half a teaspoon of pepper and garlic powder, then mix everything with your fingers until the marinade is distributed evenly.

Cover with plate, or plastic wrap, and let it marinade for at least 1 hour in the fridge (more time will make the meat more spicy, so you can experiment with the taste you like most).

Step #4: Cook the rice (10 minutes)

Wash the rice and cook it following your rice cooker's instructions, or the packaging instruction when you cook it in the pot.

Step #5: Prepare side sauce (8 minutes)

Peel, and cut the carrots into large pieces, then peel and dice the potato. Place them in a small pot of boiling salty water. Boil them for about 5-7 minutes until cooked, then take out and let them dry a bit.

In the meantime chop the onion into fine pieces.

Step #6: Mix it all together (9 minutes)

Heat some oil on a frying pan and when it's hot, place each loin steak in the pan. Let them brown nicely before you flip each one, and them let them fry for another 2 or 3 minutes to slightly brown the other side.

Put your carrots and potato into the pan and let them fry in the juices. You can pour the rest of the teriyaki marinade to have more flavour.

Fry for extra 3 minutes or until everything is hot and browned with the heat and teriyaki sauce. You should have a nice, brown-colored sauce.

Step #7: Serving

Place rice serving on the side of the plate, and side it with the meat. Pour some carrots, potato and onions sauce on the side and some liquid sauce on the meat. Serve immediately!
