Orange cheese-tart

Easy: 5 steps, about 1 hour

I didn't plan to make this cake at all, what I did plan was apple tart with apricot jelly... Well, sometimes I just change my mind, especially while experimenting in the kitchen :-) The result is interesting, refreshing and citrusy! :-) If you don't like the strong orange aroma, you can replace them with any soft and sweet fruit: peaches, pears, and apricots should do fine!

Make sure to peel oranges very thoroughly, because the white part (pith) of the peel may give a pungent, strong unwelcome flavor during baking!

Ingredients for 10 portions

  • 1x Egg (50g)
  • Flour: 300g
  • Butter: 150g
  • White sugar: 100g
  • Light cream cheese: 200g
  • White sugar: 1 spoon (15g)
  • Salt: 1 pinch (1g)
  • 3x Oranges (400g)
  • White sugar: 1 spoon (15g)

Step #1: Prepare the pie crust dough (10 minutes)

In a large bowl mix flour, sugar, diced butter (1cm cubes) and egg, then mix thoroughly with kneading hooks.

Knead with hands to make the dough stick, it will seem like it's impossible at first, but keep squishing and working it to keep it together. It will achieve a grainy consistency, and should stick together.

Rest the dough in the fridge for at least 1 hour, then lay a thin layer in the tart baking form (2-3mm thick is the best), and set aside to the refrigerator.

If the dough really doesn't keep together after 2-3 minutes of kneading, you may add up to 1 teaspoon of water.

Step #2: Prepare oranges (5 minutes)

Peel oranges, removing as much of the pith (white peel part) away as possible. Slice each orange into 5-10mm thick slices across, and set apart.

Recipe calls for 400g of peeled oranges, so plan your shopping accordingly with at least 1 extra orange!

Step #3: Prepare the cheese (1 minute)

Mix cheese with 1 tablespoon of sugar and a pinch of salt.

Pour the cheese mixture into the baking form with pie crust laid out, and smooth evenly with spatula.

Step #4: Prepare the tart for baking (2 minutes)

Place orange slices starting with outer part, then when the ring is complete place the nicest slice in the middle. Fill the remaining space between center slice and outer ring with leftover oranges.

Sprinkle some (1 tablespoon) of sugar over the oranges, then gently shake the form to remove air bubbles and let orange slices set a little in the cheese mixture.

Step #5: Bake the tart (30 minutes)

Heat the oven to 180°C and bake the tart on the low or lower-medium level for 25-30 minutes.

Let the tart cool down completely when baked, and serve your delicious cake!

You can verify the doneness of the cake by looking at the pie crust at the border — it should get a nice, golden-brown color.
